The baked rice pudding is delicious and served warm. This recipe has all the charm of comfort food.
Ingredients
- 1 cup uncooked white rice
- 2 cups water
- Three eggs, beaten
- 2 cups milk
- 1/2 cup white sugar
- One teaspoon of vanilla extract
- 1/2 teaspoon salt
- 1/3 cup raisins
- One pinch of ground nutmeg

- Bring water to a rolling boil in a 3-quart pan with the rice. Reduce heat, and simmer for 25-30 minutes.
- Preheat the oven to 325° F (165° C).
- Combine eggs, milk, sugar, vanilla extract, and salt in a large mixing bowl. Stir in the cooked rice and raisins. Transfer to a 10x6x2-inch baking dish.
- Sprinkle nutmeg on top and bake uncovered for 30 minutes. Continue baking until a knife is inserted in the center and comes out clean. This should take about 30 minutes.
